Sardella, tarantella, piu bella - com receita! Capiche??




Você conhece o Wessel (István Wessel)? Sabe quem? Aquele que passa as receitas na BandNews FM, e que tem a boutique de carnes especiais, que leva o nome de sua família, a quem eu escuto e de quem surrupio várias receitas (e, especilamente, dicas sobre preparação de carnes. No seu site - http://www.wessel.com.br/ - tem até um churrascômetro, idéia fantástica para ajudar a gente a programar as quantidades de carnes para o churrasco)...Pois bem. Ele andou pedindo aos ouvintes receitas de família. Aha! Eu sou ouvinte! Então, passei para ele a receita do frango que meu Nonno fazia (ele publicou: http://www.wessel.com.br/blog/?p=1110  - eba!!). 
Esse pedido me fez pensar sobre as receitas de família; pensar quais receitas que eu faço que são efetivamente de família. Aí veio o dia dos pais...Queria uma receita que remetesse a ele. Meu pai... de quem eu quase nunca falo aqui. 
(Acho que minha admiração por ele é tão grande e a falta que sinto dele tão absurda, que qualquer coisa que eu fale parece pouco. Sempre será pouco. 
Meu pai era o Super Homem. Mesmo. Ponto.)
Ele não cozinhava nada, acho que sequer fazia café. Lembro só que ele gostava de "assar" cabeças de alho no microondas para acompanhar um filé, sempre muito bem passado (tremam, apreciadores de carne!!). Mas, inobstante isso, ele adorava comer. Comer bem! Adorava massas (especialmente o fusilli - não o "parafuso", mas, sim, aquele comprido e fechado, vazado no meio, que eu fazia para ele, enrolando cada massa numa agulha de tricô...hahaha), pizzas, pães, amendoim e, dentre muitas outras coisas, esse antepasto, a Sardella. 
Então, aí vai a receita (quase) de família:

SARDELLA - RECEITA




Você vai precisar de:

-tempo! (leva bem umas 3 horas para fazer e uns 3 dias para começar a curtir);

- 1/2 quilo de pimentões vermelhos (se forem pequenos, aqueles caipiras,que têm muito mais sabor); ou 800 grs, se forem como esses que usei, da foto, grandes (são mais adocicados);



- 1 kg de tomates pelados, sem sementes; 1/2 xícara de azeite (sempre extra virgem, e de boa qualidade);




- dois dentes de alho grandes;


- duas folhas de louro;


- 1 colher de chá de pimenta do reino; outra de molho de pimenta vermelha; outra de noz moscada; e, outra de pimenta calabresa; e,



- 150 grs de aliche (com o azeite da conserva).







Lave os pimentões, tire suas sementes. e corte em pedaços.



Leve ao liquidificador junto com os tomates (faça em duas vezes, para não ancher muito o copo e transbordar).


Bata bem até "desaparecerem" as cascas dos pimentões.


Coloque os tomates e pimentões batidos em uma panela grande de fundo grosso, e leve ao fogo alto.


Quando começar a ferver, junte o louro e abaixe o fogo (deixe em fogo baixo mesmo).





Vá limpando as bordas da panela e mexendo de vez em quando. 



Acompanhe sempre a fervura. Mantenha a chama do fogão baixa e não deixe de mexer em intervalos. Os líquidos vão secando e a quantidade de "massa" diminui; fica quase 1/3 da quantidade original.
O tempo de cozimento varia muito: depende da quantidade de líquido dos tomates e dos pimentões, e, claro, do fogão de cada um.





Quando os líquidos secarem e estiver numa consistência de extrato de tomate, está bom. Tire do fogo e deixe esfriar.


Depois de frio, junte as pimentas, a noz moscada; o azeite, o alho e o aliche, cortado em pedaços pequenos com uma tesoura (o azeite da conserva do aliche deve ser utilizado):










Misture tudo muito bem e deixe em recipiente fechado, na geladeira por uns 3 dias, antes de servir. 
Sirva como antepasto, com um bom pão italiano!



E, aí, comece tudo de novo, porque vão pedir!!
